Instructions
Preheat oven to 375F
Fry bacon until near crisp
Meanwhile peel and slice potatoes
When bacon is done, remove from pan
Take 1/3 C drippings and transfer to sauce pan
Over medium heat whisk in flour, then chicken stock
Cook until thickened
Remove from heat and whisk in mayonnaise
Whisk in egg (if using)
Make 3 layers (sauce/onion and bacon/potatoes)
Finish with a layer of sauce
Bake for 1 hr
