Scalloped Potatoes

 12 inch oval baking disk (2 inches deep)

Ingredients

 4    large potatoes
500 g  bacon (chopped)
1
 onion (sliced)
1/3 C  flour (GF)
2 C  chicken stock
1/2 C  mayonnaise
1
 egg (optional)

Instructions

  1. Preheat oven to 375F
  2. Fry bacon until near crisp
  3. Meanwhile peel and slice potatoes
  4. When bacon is done, remove from pan
  5. Take 1/3 C drippings and transfer to sauce pan
  6. Over medium heat whisk in flour, then chicken stock
  7. Cook until thickened
  8. Remove from heat and whisk in mayonnaise
  9. Whisk in egg (if using)
  10. Make 3 layers (sauce/onion and bacon/potatoes)
  11. Finish with a layer of sauce
  12. Bake for 1 hr
