Butter Scotch Rolls

Ingredients

¼ C Glutinous Rice Flour

6 Tb Vegan Margarine (or shortening)
1 C Oat Milk

Tb Psyllium Husk Powder
¼ C Canola oil



½ C Vegan Margarine (approx)
1 C Brown sugar
1 T Cinnamon

Instructions

  1. Preheat oven to 400°F (convection bake)
  2. In mixer, Combine flour, methyl cellulose, baking powder, salt, and sugar.
  3. Mix in margarine/lard until cut into small pieces.
  4. Whisk together oat milk and psyllium husk powder.
  5. Wait 5 min until gelled.
  6. Mix in oil.
  7. Add to dry ingredients and mix for 3 - 4 minutes.
  8. Let rest for 10 minutes.
  9. Roll out dough.
  10. Spread margarine over dough and then sprinkle on brown sugar and cinnamon.
  11. Roll up, cut into 1.5 inch slices, and place each slice into a muffin cup.
  12. Bake for 20-25 min until nicely browned
