GF Cranberry Blueberry Crumble

Ingredients

4 C Blueberries (fresh or frozen)
2 C Cranberries (fresh or frozen)
½ C Sugar
2 Tb Corn Starch

Juice and peel from orange
1 pinch Salt

GF rolled oats
½ C GF flour
¾ C Brown sugar
½ tsp Cinnamon
¼ tsp Salt

Vegan margarine

Instructions

  1. Preheat oven to 375°F (convection bake)
  2. Combine blueberries, cranberries, sugar, corn starch and mix.
  3. Add in orange juice and peel and mix.
  4. Pour into baking dish
  5. Mix together rolled oats, flour, brown sugar, cinnamon and salt.
  6. Mix in margarine 1 heaping Tb at a time until mixture mostly adheres into a layer
  7. Break up into small (pea-sized) pieces and scoop on top of berries
  8. Bake for 40 - 45 min until nicely browned (optionally broil for a few minutes at the end)
