4   egg whites
¼ tsp salt
¼ tsp cream of tartar
1 C sugar
1 tsp vanilla extract

Instructions

  1. Preheat oven to 225ºF.
  2. Cut out a piece of baking parchment to cover the baking sheet.
  3. Add
  4. Beat egg whites, salt, and cream of tartar until soft peaks form.
  5. Add vanilla and beat into whites.
  6. Add sugar 1 T at a time, beating whites after each addition.
  7. If whites seem too soft, continue beating with mixer for an extended time (up to 20 or 30 minutes).
  8. Use a pastry bag to pipe meringues onto parchment paper.
  9. Cook for 60 to 90 minutes (until nicely dried out).
