Ingredients

1   GF Cake Icing
1   meringue mushrooms
4   eggs
1   egg yolk
¼ C sugar
  pinch salt
2/3 C GF flour
1 tsp orange peel
4 Tb orange liqueur

Instructions

  1. Preheat oven to 400ºF.
  2. Line baking sheet with parchment (don't use silicone baking sheets, the cake will stick)
  3. Beat eggs, egg yolk, sugar, & salt at medium speed until stiff peaks form (approx. 20 to 40 minutes... while waiting you can start on the icing).
  4. Gently sift flour over top and fold into batter (in about 4 to 6 batches).
  5. Fold in orange peel.
  6. Spread batter into pan and bake until springy (approx. 7 minutes).
  7. Transfer cake to a towel and let cool.
  8. Finish making the icing now if you haven't already.
  9. Moisten the cake with the liqueur.
  10. Reserve approx. 1/2 C for decorations.
  11. Use a about 1/3 of the icing to pipe a thin layer onto the cake and roll up along the long side of the cake (jelly roll style)
  12. Place on serving carrier (cardboard lined with tin foil) and trim ends.
  13. Cut off "branches" at each end with a 45º slice.
  14. Use some icing to glue the branches onto the main trunk.
  15. Ice the cake with the remaining icing (pipe on initially, then spread)
  16. Use the researved icing to create holly leaves and berries.
  17. Garnish the serving platter with meringue mushrooms.
